No trip to Oaxaca would be complete without a workshop and tasting focused on these very important, traditional foods.
Chocolate is a staple ingredient in Oaxacan households; in fact, most locals start their day not with a cup of coffee, but with a cup of hot chocolate and a sweet bread for dipping.
You will visit one of the best chocolate workshops in town, Chimalapa, whose mantra is "from my town to your table", and that's because the shop owner is indigenous from a cacao growing region of Oaxaca.
It truly will be a "seed to bar" event, as we you'll learn how cacao seeds are transformed into chocolate using artisanal, traditional methods.
This is a hands-on for everyone as you roast the cacao in a clay comal, peel the seeds and select local ingredients to create your chocolate drink.
All of this is accompanied by the fascinating history and cultural importance that cacoa and chocolate have played in Mexican life.
You'll prepare the classic chocolate drink using a "molinilo", a traditional wooden kitchen tool for incorporating the chocolate. Nibble on cacao-based snacks knowing that you're now a chocolate expert, especially with your very own molinilo to take home.

Alebrije is a Mexican folk art craft depicting wooden-carved mythical figures and spirit animals, all painted with the most unbelievable precision and detail. Some large pieces take years to complete!
Our location is a cooperative for 60 indigenous families showcasing their handcrafts from embroidery, leather goods, woven wool rugs and, of course, the alebrije.
Several artists will demonstrate the intricate process of carving and painting while explaining the history behind it. Coffee and mezcal are offered as you sip-and-learn.
An alebrije kit is included as the perfect take-home souvenir for yourself or an aspiring artist you know.

With a focus on Mexican vineyards, you'll start with sparkling wines and aperitivos in the luxurious wine-lined wall at Salon Frances; a Oaxacan dinner party will follow, with wines paired to each course, all in the most architecturally stunning space.
Transportation is included to San Felipe, a charming, residential neighborhood on the outskirts of Oaxaca centro.
