Chef Olga Cabrera is a reference in Oaxaca. Just a stone's throw from the famous Santo Domingo de Guzmán temple, Cabrera runs three different businesses within the same building: the Masea – a bakery full of fragrant pastries and sweets –, the Atolería – where you can sample the indigenous drink or another hot beverage – and the restaurant itself.
The latter is just past the comal where tetelas, memelas, tacos and tlayudas are made and up the stairs to the shaded terrace. Her cuisine, a mix of family heritage and modern classics, pays homage to farmers and their products, putting their stories at the forefront. The salsa prepared at the table is a welcome touch. Aromatic soups and delicious, hearty moles follow (the one made with bay leaves is a delight). All to be enjoyed with the views of the surrounding mountains as a magnificent backdrop.
